The restaurant’s name, coined from the Japanese words “HITO,” meaning “fire” and “people,” and “TACUBO,” the chef's name, reflects the connection between the exquisite cuisine dynamically grilled over a wood-fired “fire” and the “people,” including both guests and producers.
